With the weather heating up, I’m dreaming of iced coffees and sangria. I don’t know why but nothing says summertime like delicious iced drinks to cool you down.
Now, I have mentioned a few times how I drink a shit ton of coffee on a regular basis. Your casual caffeine addict over here. Right now especially since I’m writing a million Accounting final exams, coffee is actually saving my life. Okkkkkk maybe not a million, but it sure feels that way.
This week I have made it my mission to try and test iced coffee recipes and what I believe to be the perfect mix of HEALTHY and TASTY. A lot of ‘healthy’ coffee recipes are actually packed with sugar, dairy and calories. Not so healthy and hella fattening. A stable rule in my diet is not to make a conscious effort not to drink my calories unless its alcohol. I call this rule: Priorities.
SO this leads me to today’s recipe:
Prep Time: 5 mins | Serves: 1 | Total Time: 10 mins
150 mL almond coconut milk
200 mL brewed coffee, chilled
Full glass of ice
Drizzle of Honey (topping)
Pinch of Cinnamon (topping)
1 tsp vanilla extract or sweetener (I did not use)
Substitute the type of milk with preference (almond, soy, etc)
Brew coffee and chill for at least an hour and up to a day. Using a standard water glass, fill to the top with ice cubes. Pour in chilled coffee (should fill a little more than half the glass) and milk. Add sweetener/vanilla if you choose to use for a little extra flavor. Give the coffee mixture a stir, now top with honey and cinnamon. Enjoy!
